You know those days when you’re just craving something warm, sweet, and homemade? Well, this Sunday morning was one of those for me.

As I snuggled up on the couch, with a cup of coffee warming my hands, I realized I wanted a treat that was comforting yet simple.

And what’s better than oatmeal cookies fresh out of the oven? Plus, I had all the ingredients just sitting there, waiting to be used. Perfect, right?

Oatmeal Cookies

Ingredients You’ll Need

Here’s what I grabbed from my pantry:

  • 1 packet oatmeal (or 1/2 cup oatmeal with 1 tbsp sweetener)
  • 1.5 tbsp apple sauce
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda

Let’s Get Mixing 🥄

First things first, I mixed all these ingredients in a bowl. The apple sauce made everything so smooth and the vanilla? Well, it added that extra touch of cozy that I needed. The smell alone was enough to make me smile.

Time to Shape and Bake 🎉

Next, I formed the mixture into cute little cookies. They don’t have to be perfect—after all, homemade is all about that rustic charm, right? Popped them in the oven at 350°F for 6-8 minutes. Just enough time to let the edges get slightly golden and crispy while the centers stay soft.

The Finishing Touch ✨

Once they were out and cooled (I had to restrain myself from diving in too soon), I decided to drizzle some icing on top.

You know, just a little extra sweetness never hurt anyone. I mixed a bit of powdered sugar with water to make a simple icing, and it was the perfect finishing touch.

And voilà! My cozy Sunday treat was ready. These cookies are so easy to make, but they brought a bit of warmth and joy into my day. I hope they do the same for you.
