Easy Chocolate-Covered Cookie Dough Bites

Ingredients:

  • 3 tbsp maple syrup
  • 3 tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract
  • 3/4 cup almond flour
  • Chocolate chips (as many as your heart desires)
  • A dash of salt

Instructions:

  1. Mix the wet ingredients:
In a mixing bowl, combine the maple syrup, melted coconut oil, and vanilla extract. Stir until well blended.
  2. Add the dry ingredients:
Gradually add in the almond flour, salt, and chocolate chips. Stir until the mixture reaches a cookie dough consistency. If the dough feels too wet, add a little more almond flour until it’s just right.
  3. Prepare the chocolate layer:
Melt some chocolate chips, adding a bit of coconut oil if you like a smoother texture.
  4. Assemble the bites:
Pour a layer of melted chocolate into the bottom of an ice cube silicone tray. Then, place a small scoop of cookie dough on top. Cover with more melted chocolate to seal the deal.
  5. Freeze and enjoy:
Pop the tray into the freezer for about 20 minutes. Once set, your chocolate-covered cookie dough bites are ready to be enjoyed!
