Cookie Dough Cubes
This easy snack combines maple syrup, coconut oil, and almond flour with chocolate chips to create a delicious treat. The mixture is layered with melted chocolate in an ice cube tray and frozen for 20 minutes. It’s a gluten-free, dairy-free, and kosher snack, perfect for Passover or any time you want a quick, satisfying treat.

- 3 tbsp maple syrup
- 3 tbsp coconut oil
- ½ tsp vanilla
- ¾ cup almond flour
- chocolate chips - however many your heart deserted
- a dash of salt
- Mix the maple syrup, melted coconut oil and vanilla 
- Add in the almond flour, salt and chocolate chips 
- Mix everything until it has a cookie dough consistency (add more almond flour if needed) 
- Melt chocolate chips (with optional coconut oil) 
- Pour the melted chocolate into the bottom of an ice cube silicone tray 
- Place cookie dough on top and then cover with more melted chocolate 
- Freeze for 20 minutes and enjoy! 
- Customize It: Feel free to experiment with different flavors by adding a sprinkle of sea salt on top or mixing in some crushed nuts for extra crunch.
- Storage: These bites can be stored in an airtight container in the freezer for up to a week—if they last that long! 😉
