Cookie Dough Cubes

This easy snack combines maple syrup, coconut oil, and almond flour with chocolate chips to create a delicious treat. The mixture is layered with melted chocolate in an ice cube tray and frozen for 20 minutes. It’s a gluten-free, dairy-free, and kosher snack, perfect for Passover or any time you want a quick, satisfying treat.

Ingredients
  

  • 3 tbsp maple syrup
  • 3 tbsp coconut oil
  • ½ tsp vanilla
  • ¾ cup almond flour
  • chocolate chips - however many your heart deserted
  • a dash of salt

Instructions
 

  • Mix the maple syrup, melted coconut oil and vanilla
  • Add in the almond flour, salt and chocolate chips
  • Mix everything until it has a cookie dough consistency (add more almond flour if needed)
  • Melt chocolate chips (with optional coconut oil)
  • Pour the melted chocolate into the bottom of an ice cube silicone tray
  • Place cookie dough on top and then cover with more melted chocolate
  • Freeze for 20 minutes and enjoy!

Notes

  • Customize It: Feel free to experiment with different flavors by adding a sprinkle of sea salt on top or mixing in some crushed nuts for extra crunch.
  • Storage: These bites can be stored in an airtight container in the freezer for up to a week—if they last that long! 😉
