Cookie Dough Cubes
This easy snack combines maple syrup, coconut oil, and almond flour with chocolate chips to create a delicious treat. The mixture is layered with melted chocolate in an ice cube tray and frozen for 20 minutes. It’s a gluten-free, dairy-free, and kosher snack, perfect for Passover or any time you want a quick, satisfying treat.

- 3 tbsp maple syrup
- 3 tbsp coconut oil
- ½ tsp vanilla
- ¾ cup almond flour
- chocolate chips - however many your heart deserted
- a dash of salt
Mix the maple syrup, melted coconut oil and vanilla
Add in the almond flour, salt and chocolate chips
Mix everything until it has a cookie dough consistency (add more almond flour if needed)
Melt chocolate chips (with optional coconut oil)
Pour the melted chocolate into the bottom of an ice cube silicone tray
Place cookie dough on top and then cover with more melted chocolate
Freeze for 20 minutes and enjoy!
- Customize It: Feel free to experiment with different flavors by adding a sprinkle of sea salt on top or mixing in some crushed nuts for extra crunch.
