You know those days when you just need a little pick-me-up? That was me last week. It had been a long day, filled with back-to-back meetings, and I was craving something sweet but didn’t want to spend ages in the kitchen.

That’s when I remembered my go-to treat—No Bake Almond Truffles. These little bites of joy are so easy to make, and they never fail to brighten my mood. Plus, they’re perfect for sharing with friends or indulging in a moment of “me time.” Another great thing about these truffles is that they satisfy my sweet tooth without having to turn on the oven. And if you love the taste of hazelnut and chocolate, you should try making some homemade no bake ferrero rocher bars as well. They require just a few ingredients and are the perfect way to treat yourself.

The Magic Ingredients

When it comes to making these truffles, I love how simple yet satisfying the ingredients are. Just four basics, and you’re on your way to deliciousness. Here’s what you’ll need:

  • 1/2 cup almond butter (120g): The creamy base that brings everything together.
  • 3/4 cup ground almonds (75g): Also known as almond flour, this adds a lovely, nutty texture.
  • 2.5 tbsp maple syrup: A touch of sweetness without being overpowering.
  • Pinch of sea salt (optional): Enhances all the flavors, making each bite even more delightful.

And for that extra bit of indulgence:

  • 1/2 cup vegan dark chocolate chips (75g): Because who doesn’t love chocolate?
  • Chopped almonds for topping (optional): Adds a nice crunch and makes the truffles look extra fancy.

Let’s Get Rolling

1️⃣ Mix it up: In a bowl, combine the almond butter, ground almonds, maple syrup, and a pinch of sea salt. Stir until everything is well-mixed. Depending on the almond butter you’re using, you might need a bit more ground almonds to get the right consistency. It should be soft, sticky, and easy to roll into balls.

2️⃣ Shape and chill: Roll the mixture into small balls (I usually get about 12) and pop them into the fridge while you work on the chocolate.

3️⃣ Chocolate coating: Melt the vegan dark chocolate chips in a microwave or over a double boiler. If the chocolate is too thick, add a teaspoon of melted coconut oil to thin it out. Once melted, dip each almond truffle into the chocolate, ensuring it’s fully coated. Sprinkle with chopped almonds if you like, then refrigerate to set.

Tip: If your chocolate is thick and hard to work with, don’t stress! A little coconut oil works wonders in smoothing it out, making the coating process a breeze.

The Final Touch

And that’s it! Your No Bake Almond Truffles are ready to be enjoyed. Keep them stored in a sealed container in the fridge, though they probably won’t last long—at least they never do in my house!
