Base Ingredients

  • 1 cup hazelnuts (130g)
  • 10 large, soft medjool dates, pitted
  • 1/2 cup peanut or almond butter (120g)
  • 3 tbsp cacao powder
  • Pinch of sea salt (optional)

Topping Ingredients

  • 1/2 cup chopped hazelnuts (70g)
  • 3 tbsp peanut or almond butter
  • 2/3 cup dark chocolate chips (100g)

Instructions

  1. Prepare the Base: In a food processor, blend the base ingredients until smooth. If the mixture is too dry, add 1-2 tablespoons of water until it reaches a soft, sticky consistency.
  2. Form the Cups: Roll the mixture into 12 balls. Roll each ball in the chopped hazelnuts to coat them. Place them into a silicone cup tray or paper cases. Use your thumb or a spoon to make a small indent in the center of each ball.
  3. Add the Topping: Spoon about a teaspoon of peanut butter into each indent. Melt the dark chocolate chips using your preferred method (e.g., double boiler or microwave). Drizzle the melted chocolate over each cup, covering the peanut butter. Refrigerate until set.

  • Add all the base ingredients to a food processor and blend until smooth. This might take a few minutes. If it doesn’t come together then add 1- 2 tbsp of water – it will depend on how soft your dates are and which nut butter you use. Keep blending until soft and sticky.
  • Roll the mixture into 12 balls and roll in the chopped nuts. Put into a silicone cup case tray (or paper cases) and make a small indent in the centre of each one
  • Add a tsp of peanut butter to each cup and top with a spoonful of melted chocolate. Refrigerate to set and store in the fridge
