How to Make Spiced Banana Fritters

  • Start by mashing the banana with a fork until it becomes a smooth puree. No chunks! This ensures the batter is light and even.
  • In a separate bowl, mix the flour, cinnamon, ginger, nutmeg, and baking powder. Slowly add this to the banana puree, folding gently until you get a soft but firm dough. It shouldn’t be sticky! If it is, add a tiny bit more flour.
  • Divide the dough into 8 equal pieces and roll them into little balls. They should be slightly firm but not dry.
  • Place them in the air fryer basket in a single layer—no crowding! Cook at 190°C (375°F) for 7 minutes or until they turn a lovely golden brown.
  • While the fritters cool slightly, mix sugar, cinnamon, and orange zest powder in a small bowl.
  • Brush each fritter with a light coat of orange marmalade and roll them in the sugar-cinnamon-orange mix.
