  • 250 g Astra Margarine
  • 200 g sugar
  • 300 g flour sifted
  • 2 tsp baking powder
  • ¼ tsp salt
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 ½ tsp almond extract
  • ¼ cup milk

Almond Glaze Ingredients

  • 1 cup icing sugar sifted
  • 1 ½ tbs water
  • ¼ tsp almond extract
  • ¼ cup almonds chopped for sprinkling

Cake Instructions

  • Preheat the oven to 180°C (350°F).
  • Line a 8x8 inch square tray with parchment paper.
  • Sift together the flour, baking powder, salt, and set aside.
  • Cream Astra Margarine and sugar until pale and creamy.
  • Add one egg at a time, beating for 1 minute after each.
  • Add vanilla extract and beat for 1 more minute.
  • Fold in flour in 3 batches, gently fold in milk and almond extract.
  • Pour batter into prepared tray and smooth evenly.
  • Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Cool completely before glazing.

Almond Glaze Instructions

  • Mix icing sugar, water, and almond extract until smooth.
  • Place cooled cake on serving plate and pour glaze on top.
  • Sprinkle with chopped almonds.
  • Slice and serve.
