Description

Delightful cardamom and rose-flavored donuts, topped with a beautiful purple sweet potato rose frosting. These vegan-friendly treats combine aromatic spices with a smooth, colorful frosting, perfect for any occasion.

Ingredients

Donut Batter

  • 2 ½ cups all-purpose pastry flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cardamom powder
  • 1 cup applesauce
  • ½ cup almond milk mixed with 2 tsp chia seeds or flax meal and 1 tsp rice vinegar
  • 2 tbsp rose water
  • 5 tbsp vegan butter melted, or use coconut oil

Purple Sweet Potato Rose Frosting

  • ½ cup vegan cream cheese softened
  • cup vegan butter softened
  • 2 ½ - 3 cups powdered sugar
  • 2 tbsp organic purple sweet potato powder
  • 1 tsp vanilla extract

Instructions

Make the Donuts

  • Preheat the oven to 370°F (190°C).
  • In a large bowl, mix the all-purpose pastry flour, granulated sugar, baking powder, baking soda, and cardamom powder.
  • In another bowl, combine applesauce, almond milk mixture (with chia seeds or flax meal and rice vinegar), rose water, and melted vegan butter or coconut oil.
  • Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  • Prepare the donut pans by spraying with avocado or coconut oil. Pour the batter into a piping bag and fill the donut pan.
  • Bake for 20 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  • Cool the donuts on a wire rack before frosting.

Prepare the Frosting

  • In a large bowl, mix softened vegan cream cheese, vegan butter, and vanilla extract until smooth.
  • Add powdered sugar in 1/2 cup increments until the desired frosting consistency is reached.
  • Slowly add purple sweet potato powder, mixing until smooth.
  • Spread the frosting over the donuts and top with dried rose petals.

Notes

  • Use almond milk with chia or flax seeds as a vegan egg substitute.
  • Adjust powdered sugar in frosting to achieve desired sweetness and consistency.
  • Frosted donuts can be stored in the refrigerator for up to 3 days.
