Preheat the oven to 370°F (190°C).
In a large bowl, mix the all-purpose pastry flour, granulated sugar, baking powder, baking soda, and cardamom powder.
In another bowl, combine applesauce, almond milk mixture (with chia seeds or flax meal and rice vinegar), rose water, and melted vegan butter or coconut oil.
Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
Prepare the donut pans by spraying with avocado or coconut oil. Pour the batter into a piping bag and fill the donut pan.
Bake for 20 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
Cool the donuts on a wire rack before frosting.
