Main Ingredients
- 2 lbs chicken breast cut into bite-size pieces
- 8 pieces lasagna noodles cooked
Seasonings
- 2 tbsp Cajun seasoning divided
- 1 tbsp garlic powder
- 1 tsp paprika
- 1 tbsp red pepper flakes
Sauce & Filling
- 1 stick butter
- 1 tbsp garlic minced
- 1 cup heavy whipping cream
- 4 oz cream cheese half block
- 1 cup Parmesan cheese grated
- 1 cup mozzarella cheese fresh grated
- 6 oz spinach
- 2 tbsp parsley chopped
Prepare Chicken
Chop the chicken breast into bite-size pieces and season with 1 tablespoon Cajun seasoning, garlic powder, and paprika.
Cook the chicken in a pan over medium-high heat until fully done, then remove and set aside.
Make Sauce & Filling
Melt butter in the same pan, add garlic and red pepper flakes, and sauté briefly.
Add heavy cream and cream cheese, stirring until smooth.
Mix in Parmesan, parsley, and Cajun seasoning until creamy.
Reserve some sauce for later.
Stir in spinach and cooked chicken.
Assemble
Spread sauce in baking dish.
Fill and roll noodles, place seam-side down.
Top with sauce and mozzarella.
