  • 2 lbs chicken breast cut into bite-size pieces
  • 8 pieces lasagna noodles cooked

Seasonings

  • 2 tbsp Cajun seasoning divided
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 tbsp red pepper flakes

Sauce & Filling

  • 1 stick butter
  • 1 tbsp garlic minced
  • 1 cup heavy whipping cream
  • 4 oz cream cheese half block
  • 1 cup Parmesan cheese grated
  • 1 cup mozzarella cheese fresh grated
  • 6 oz spinach
  • 2 tbsp parsley chopped

Instructions

Prepare Chicken

  • Chop the chicken breast into bite-size pieces and season with 1 tablespoon Cajun seasoning, garlic powder, and paprika.
  • Cook the chicken in a pan over medium-high heat until fully done, then remove and set aside.

Make Sauce & Filling

  • Melt butter in the same pan, add garlic and red pepper flakes, and sauté briefly.
  • Add heavy cream and cream cheese, stirring until smooth.
  • Mix in Parmesan, parsley, and Cajun seasoning until creamy.
  • Reserve some sauce for later.
  • Stir in spinach and cooked chicken.

Assemble

  • Spread sauce in baking dish.
  • Fill and roll noodles, place seam-side down.
  • Top with sauce and mozzarella.

Bake

  • Bake covered at 350°F for 12 minutes.
  • Broil uncovered for 2 to 4 minutes until golden.

Notes

  • Cook lasagna noodles just until al dente to prevent tearing while rolling.
  • Reserve enough sauce to keep the rollups moist during baking.
  • Watch carefully during broiling to avoid burning the cheese.
