Description

Fun, colorful, and delicious cakesicles made from a rich Madeira cake and covered in a smooth white chocolate coating. These cakesicles are perfect for parties, celebrations, or gifting, with customizable decorations like fondant flowers and sprinkles.

Ingredients

Madeira Cake

  • 250 g salted butter, softened
  • 350 g castor sugar
  • 6 eggs
  • 250 g sour cream
  • 1 tsp vanilla extract
  • 150 g self-raising flour
  • 125 g cake flour
  • 1 tsp baking powder

Frosting

  • 150 g unsalted butter, softened
  • 250 g icing sugar, sifted
  • 1 Tbsp milk
  • ½ tsp vanilla extract

Chocolate Coating

  • 4 slabs white chocolate
  • a few drops of food coloring
  • sprinkles
  • fondant flowers

Instructions

Madeira Cake

  • Preheat the oven to 170°C.
  • Prepare 2 springform pans with baking spray.
  • In a large bowl, beat the butter and sugar together for 3-4 minutes until light and fluffy.
  • Add the eggs to the butter mixture in 3 additions, beating well after each addition.
  • Mix in the sour cream and vanilla extract.
  • Sift in the self-raising flour, cake flour, and baking powder. Mix until well combined.
  • Divide the batter between the 2 pans and bake for 40 minutes.
  • Allow the cake to cool completely in the pans before frosting.

Frosting

  • Beat the butter for 5 minutes until pale and fluffy.
  • Add the sifted icing sugar in 2 additions, beating for 5 minutes after each addition.
  • Mix in the milk and vanilla extract, then beat for an additional 2-3 minutes.

Notes

  • Make sure the cake is completely cooled before frosting to avoid melting the frosting.
  • You can use different food coloring and decorations to customize the cakesicles for different occasions.
