  • 2 tsp ground cardamom
  • 2 tsp turmeric
  • 2 tsp ground cinnamon
  • 2 tsp salt
  • 1.5 kg chicken thighs cut into 3 cm pieces

  • In a large mixing bowl, combine the Greek yogurt, cumin, cardamom, turmeric, cinnamon, and salt. Add the chicken thigh pieces, tossing well to ensure each piece is coated.
  • Yogurt marinades coat better in a glass mixing bowl like this—no lingering smells like plastic.
  • Marinate at room temperature for 15 minutes or refrigerate for up to 2 hours.
  • Preheat the grill to medium-high heat. Thread the chicken onto 8 metal or soaked bamboo skewers, spacing the pieces evenly.
  • Wooden skewers burn fast—metal skewers like these last forever and cook meat more evenly.
  • Grill the skewers, turning every 3-4 minutes, for a total of 10-12 minutes or until lightly charred and fully cooked.
