Ingredients
  

For the Bagels:

  • 2 cups all-purpose flour 240g
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup thick dairy-free yogurt adjust as needed based on yogurt consistency

For the Topping:

  • 2 tablespoons sugar
  • 2 teaspoons cinnamon

For the Maple Walnut Cream Cheese Spread:

  • ½ cup vegan cream cheese
  • Handful of chopped walnuts
  • Drizzle of maple syrup

Instructions
 

  • Prepare the Dough: In a bowl, combine flour, baking powder, salt, and yogurt. Knead the mixture with your hands until a dough ball forms.
  • Shape the Bagels: Divide the dough into 4 equal parts. Roll each part into a ball, then use your finger to poke a hole through the center to shape it into a bagel. Place each shaped bagel on a baking sheet.
  • Add Toppings: Brush the tops of the bagels with melted vegan butter, then sprinkle generously with the cinnamon sugar topping.
  • Bake: Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the bagels are golden brown.
  • Make the Cream Cheese Spread: While the bagels are baking, whisk together the vegan cream cheese, chopped walnuts, and a drizzle of maple syrup.
  • Serve: Once the bagels are baked, slice them in half, spread a generous amount of the Maple Walnut Cream Cheese on each, and enjoy!
