Ingredients
  

Option 1:

  • Sourdough bread slice
  • Cottage cheese
  • ½ - 1 tsp crispy or regular chili oil
  • Drizzle of honey
  • Pinch of salt

Option 2:

  • Sourdough bread slice
  • Cottage cheese
  • Scrambled eggs see method below for instructions
  • Salt & pepper to taste
  • Chili flakes optional

Instructions
 

Prepare the Toast:

  • Heat a pan over medium heat. Add a little butter or olive oil and toast the sourdough until golden brown on both sides.

Option 1 - Chili Oil and Honey:

  • Spread cottage cheese generously over the toasted sourdough.
  • Drizzle with chili oil (adjust to taste) and honey.
  • Sprinkle a pinch of salt.

Option 2 - Scrambled Eggs:

  • Spread cottage cheese over the toasted sourdough.
  • Top with scrambled eggs (see instructions below).
  • Season with salt, pepper, and chili flakes if desired.

For Perfect Scrambled Eggs:

  • Crack 2 eggs into a small bowl and whisk until well combined.
  • Heat a medium-sized nonstick pan over medium heat and add 1-2 tsp of butter. Swirl until melted, then reduce the heat to medium-low.
  • Add the eggs to the pan. Use a spatula to stir the eggs, folding the liquidy parts over to make contact with the skillet. Continue to stir frequently.
  • Once the eggs are mostly set but still a little wet, remove the pan from heat. Stir until done to your liking. Serve immediately.
