Puff Pastry Bites
- 2 sheets butter puff pastry thawed
- 1 wheel brie cheese cut into small cubes
- 0.5 cup roasted walnuts roughly chopped
- 0.33 cup dried cranberries
- rosemary sprigs for garnish
- 1 egg lightly beaten, for egg wash
Cranberry Orange Glaze
- 1 cup whole berry cranberry sauce
- 0.5 cup fresh orange juice
- 1 cinnamon stick
- 1 star anise
- 2 tbsp brown sugar
- 1-2 tsp soy sauce to taste
Add cranberry sauce, orange juice, soy sauce, brown sugar, cinnamon stick, and star anise to a small saucepan. Simmer gently over medium-low heat for 10–15 minutes, stirring occasionally, until slightly thickened and glossy. Remove whole spices and set aside to cool slightly.
Preheat oven to 200°C (180°C fan-forced). Grease small muffin trays. Cut each puff pastry sheet into 9 equal squares. Place squares into prepared muffin trays. Brush borders with egg wash. Add a cube of brie to the center of each, then top with a spoonful of glaze.
Bake for 15–18 minutes, or until pastry is puffed, golden, and crisp, and the brie is melted.
Sprinkle with dried cranberries and chopped walnuts. Garnish with fresh rosemary sprigs and serve immediately while warm and melty.
- The glaze will thicken further as it cools down.
- Be sure to thoroughly grease the muffin tray so the puff pastry cups release easily without sticking.
