Ingredients

For the Soup

  • 1 whole celeriac peeled and diced
  • 1 whole butternut squash or pumpkin peeled and diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 liter vegetable broth or water
  • 2 tbsp cooking oil coconut, avocado, or ghee
  • 0.25 cup plant-based cream optional

For the Mushroom Topping

  • 250 g oyster mushrooms torn into strips
  • 2 tsp soy sauce
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • to taste salt and white pepper
  • 2 tbsp cooking oil

Garnish

  • 1 handful wild garlic or chives thinly sliced
  • 1 tbsp toasted buckwheat or seeds optional
  • 1 drizzle extra virgin olive oil

Instructions

Preparation

  • Preheat the oven to 220C.
  • Toss the diced celeriac and pumpkin in oil, spread on a baking sheet, and roast until golden.
  • In a large pot, saute the onion until caramelized, then add the garlic and cook until fragrant.
  • Add the roasted vegetables to the pot, cover with broth or water, and simmer until tender.
  • Puree the mixture using a blender until smooth, adding plant-based cream if desired for extra richness.
  • Adjust consistency with more liquid if needed.

Topping and Assembly

  • Heat oil in a pan over high heat and add the torn oyster mushrooms.
  • Sear until charred and crispy at the edges.
  • Season with salt and pepper, then splash in the soy sauce and toss.
  • Sprinkle with garlic and onion powder, remove from heat, and toss once more.
  • Serve the soup in bowls topped with the crispy mushrooms, fresh herbs, toasted seeds, and a drizzle of olive oil.

Notes

  • Ensure the oven is hot enough to get a good char on the vegetables for depth of flavor.
  • Watch the garlic powder closely when adding it to the mushrooms to prevent burning.
