Creamy Savory Mushroom Oatmeal Bowl
This savory mushroom oatmeal transforms a classic breakfast staple into a rich, comforting meal. Earthy mushrooms are sautéed in butter and simmered with hearty oats, half-and-half, and subtle warm spices. Finished with grated parmesan cheese and toasted pine nuts, it delivers a gourmet twist on warm porridge.
- 2 cups mushrooms chopped, shiitake or variety of choice
- 1 cup oats
- 2 cups water add more as needed
- 1 cup half-and-half cream
- 2 tbsp butter divided
- 1 tsp salt
- ¼ tsp ground nutmeg optional
- 2 tbsp parmesan cheese grated
- 1 tbsp pine nuts roasted, optional or substitute sesame seeds
Heat a sauté pan over medium heat and melt 1 tablespoon of butter.
Add the chopped mushrooms and sauté until tender and released moisture has mostly evaporated, about 3 to 4 minutes.
Add the oats, water, and half-and-half cream to the mushrooms, stirring well to combine.
Season with salt and a pinch of nutmeg if using, stirring thoroughly.
Bring the mixture to a gentle simmer, then reduce heat to medium-low.
Cook while stirring regularly until the oats are fully cooked and thickened, about 10 to 20 minutes depending on oats used.
Stir in the remaining 1 tablespoon of butter vigorously for 30 seconds to enrich creaminess.
Ladle into bowls and top with grated parmesan cheese and roasted pine nuts before serving hot.
- Substitute water with vegetable broth for an even richer flavor profile.
- Pairs wonderfully with soft-boiled eggs or a fresh side salad.
- Garnish with chopped fresh herbs like parsley or thyme for extra color.
