Crispy Chicken Fajita Tacos
These crispy chicken fajita tacos feature cornflake-crusted chicken tenders baked or air-fried until golden, then tucked into soft tacos with fajita-seasoned peppers, onions, fresh avocado, and a squeeze of lime. A high-protein, family-friendly dinner ready in about 45 minutes.
Crispy Chicken
- 300 g chicken tenders cut into 4 large pieces
- 60 g cornflakes crushed
- 1 egg
- Salt and black pepper to taste
- ½ packet fajita seasoning mix divided
Fajita Vegetables
- ½ bell pepper sliced
- ½ onion sliced
For Assembly
- 4 soft tacos approx. 80 calories each
- 1 avocado
- 1 lime
- Lettuce to serve
Make the Crispy Chicken
If using the oven, preheat to 180°C (350°F). Alternatively, have your air fryer ready to use.
Crush the cornflakes into a shallow bowl, add a quarter of the fajita seasoning along with a pinch of salt and pepper, and mix together. In a separate shallow bowl, crack the egg and whisk well.
Using one hand for wet and one for dry, dip each chicken tender into the whisked egg, then coat thoroughly in the cornflake mixture. Transfer to the air fryer basket or a lined baking tray. Repeat with the remaining tenders.
Air fry at 180°C for 20 minutes, or bake in the oven for 25-30 minutes, until the chicken is cooked through and the coating is golden and crisp.
Prepare the Toppings
While the chicken cooks, fry the sliced bell pepper and onion with the remaining fajita seasoning until softened, about 5-7 minutes.
In a small bowl, mash the avocado with a pinch of salt, pepper, and a good squeeze of lime juice.
Assemble the Tacos
Once the chicken is ready, optionally fry the soft tacos in a dry pan for a minute on each side to crisp them up.
Fill each taco with lettuce, the fajita peppers and onions, a crispy chicken tender, and a spoonful of mashed avocado. Finish with a squeeze of lime and serve immediately.
- Chicken breast can be substituted for tenders; slice into thick strips of similar size for even cooking.
- Check the chicken a few minutes early, as air fryer cook times can vary by model.
- Crisping the tacos in a dry pan before filling adds extra texture but is optional.
- Store components separately in the fridge for up to 3 days; reheat chicken in the air fryer to restore crispness.
