Easy Baked Stuffing Muffins with Spiced Butter
These savory stuffing muffins offer a fun, individual twist on a classic holiday side dish. Loaded with sautéed celery, apples, onions, turkey sausage, and rich savory seasonings, every muffin is crispy on the outside and tender on the inside. Portioned neatly in a muffin tin, they are served with a whipped spiced butter spread. They make a crowd-pleasing addition to any Thanksgiving or feast table.
For the Stuffing
- 2 stalks celery cubed
- ½ medium onion diced
- 1 Granny Smith apple diced
- ¼ cup salted butter 1/2 stick
- ½ lb turkey sausage with sage
- ½ cup chicken stock
- ½ cup water
- ½ cup This Little Goat went to Hong Kong everything sauce
- 1 ½ loaves bread 1 wheat loaf and 1/2 white loaf, cubed
- 1 tbsp This Little Goat went to Belize spice mix
- salt and black pepper to taste
For the Spiced Butter
- ½ cup unsalted butter softened (1 stick)
- ¼ tsp This Little Goat went to Belize spice mix
For the Stuffing
Sauté the celery, onion, and apple in the salted butter over medium heat until the onion becomes translucent.
Add the turkey sausage and cook until browned, breaking it apart with a spoon as it cooks.
Add the chicken stock and 1/2 cup of water, then bring to a simmer for 30 minutes.
Mix in the Hong Kong everything sauce and simmer for an additional 5 minutes.
In a separate large bowl, cube the bread and sprinkle 1 tablespoon of the Belize spice mix over the top.
Pour the warm sausage mixture over the bread and combine until fully moist. Season with salt and pepper to taste.
Preheat oven to 350°F (175°C) and grease a 12-cup muffin pan with cooking spray.
Stuff the bread mixture evenly into the muffin cups until tightly filled.
Bake for 25 to 30 minutes until browned and crispy on top.
For the Spiced Butter
In a bowl, whip the softened unsalted butter and 1/4 teaspoon of Belize spice mix together using a hand mixer until light and fluffy.
Let the stuffing muffins cool slightly, then serve warm accompanied by the spiced butter.
