Easy Creamy Cajun Beef Pasta

- 120 g dried pasta
- 250 g halal beef mince 5% fat
- 140 g tomato passata
- 50 g light cream cheese such as Philadelphia Lightest
- 1-2 tsp Cajun seasoning
- 1 onion diced
- 40 g half-fat cheddar cheese grated
- 1 bell pepper diced
- 12 cherry tomatoes halved
- 1 halal beef stock cube crushed
Cook the pasta according to the package instructions, reserving some pasta water before draining.
Heat a pan and fry the diced onion and pepper for 5 minutes, then add the halved cherry tomatoes followed by the halal beef mince.
Add the crushed halal beef stock cube to the pan and cook until the beef is fully browned.
Pour in the tomato passata, a splash of the reserved pasta water, Cajun seasoning, and salt and pepper to taste.
Stir in the light cream cheese and lower the heat, stirring continuously until melted and fully incorporated into the sauce.
Drain the pasta and add a little more pasta water to the beef mixture if needed to adjust the consistency.
Toss the cooked pasta into the beef sauce, stirring until well combined. Stir in three-quarters of the grated cheddar cheese, then serve topped with the remaining cheese.
- Reserve a cup of pasta water before draining to help loosen the sauce if it becomes too thick.
