Ingredients

  • 120 g dried pasta
  • 250 g halal beef mince 5% fat
  • 140 g tomato passata
  • 50 g light cream cheese such as Philadelphia Lightest
  • 1-2 tsp Cajun seasoning
  • 1 onion diced
  • 40 g half-fat cheddar cheese grated
  • 1 bell pepper diced
  • 12 cherry tomatoes halved
  • 1 halal beef stock cube crushed

Instructions

  • Cook the pasta according to the package instructions, reserving some pasta water before draining.
  • Heat a pan and fry the diced onion and pepper for 5 minutes, then add the halved cherry tomatoes followed by the halal beef mince.
  • Add the crushed halal beef stock cube to the pan and cook until the beef is fully browned.
  • Pour in the tomato passata, a splash of the reserved pasta water, Cajun seasoning, and salt and pepper to taste.
  • Stir in the light cream cheese and lower the heat, stirring continuously until melted and fully incorporated into the sauce.
  • Drain the pasta and add a little more pasta water to the beef mixture if needed to adjust the consistency.
  • Toss the cooked pasta into the beef sauce, stirring until well combined. Stir in three-quarters of the grated cheddar cheese, then serve topped with the remaining cheese.

Notes

  • Reserve a cup of pasta water before draining to help loosen the sauce if it becomes too thick.
  • Adjust the Cajun seasoning according to your spice preference.
