Easy Fruit Pizza Recipe

- 1 sheet of puff pastry

- ½ cup vegan heavy whipping cream
- ¼ cup vegan cream cheese
- ¼ cup powdered sugar
- 1 tsp vanilla

Roll out your puffed pastry and use a rolling pin to create an even layer.
Use a circular object to cut out a circle pizza shape. Use a smaller circular object to score a smaller circle inside the larger one to create a crust on the outside. Do not actually cut all the way through on the smaller circle!
Brush some vegan butter and maple syrup on the puff pastry and bake it at 400F for about 15 minutes, until it’s golden in color.
While the crust is baking, use a hand mixer to whisk together the whipping cream until it forms stiff peaks (it will take several minutes). Once stiff peaks are formed, add room-temperature cream cheese, powdered sugar, and vanilla and whisk those together.
Once the puff pastry crust has baked, allow it plenty of time to fully cool off because otherwise, the cream topping will melt off.
Transfer the whipped cream topping to a piping bag and pipe it on top of the fruit pizza. Add the fresh fruit, and add more powdered sugar on top if you wish.
Slice and enjoy🥰 This creates about 4 servings, if you create a 9 inch pizza, like I did here.
- Feel free to get creative with your toppings—kiwi, mango, or even a sprinkle of coconut flakes would be amazing!
- Make sure your puff pastry is fully cooled before adding the cream to avoid a melty mess.
