Description

This quick and delicious tuna pasta combines tender noodles with a flavorful garlic tomato sauce and canned tuna. It is an affordable, satisfying meal that comes together in under twenty minutes. Perfect for an easy weeknight dinner packed with protein.

Ingredients

  • 250 g pasta of choice
  • 1 can tuna in water with liquid
  • 400 g tomato passata strained tomatoes
  • 2 tbsp tomato paste
  • 2 onions finely chopped
  • 2 cloves garlic finely minced
  • 1 tbsp olive oil
  • 1-2 ladles pasta water reserved
  • 1 tsp dried oregano
  • 1 tsp chili flakes
  • 1 tsp curry powder
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • Italian herbs fresh or dried, to taste

Instructions

  • Heat olive oil in a skillet over medium heat. Add the finely chopped onions and garlic, and sauté until translucent.
  • Add the canned tuna along with its juice to the skillet and toss for 3 to 4 minutes.
  • Deglaze the skillet with the tomato passata, stir in the tomato paste, and season with oregano, chili flakes, curry powder, salt, and pepper.
  • Allow the sauce to simmer gently for about 5 minutes.
  • Meanwhile, cook the pasta in salted water until tender, then drain, reserving 1 to 2 ladles of pasta water.
  • Add the cooked pasta and reserved pasta water into the skillet with the sauce, tossing well until cohesive and heated through.

Notes

  • Including the natural juice from the tuna adds extra savory depth to the sauce.
  • Using reserved starchy pasta water helps bind the sauce nicely to the pasta.
