Easy Pumpkin Spice Baked Oats
This cozy pumpkin spice baked oats recipe is the ultimate autumn breakfast. Made without bananas, it blends simple gluten-free ingredients into a warm, cake-like morning dish. Top with chocolate chips and bake in under 20 minutes for a comforting fall treat.
- 50 g gluten-free oats
- 2 tbsp pumpkin puree
- 60 ml oat milk
- 1 egg
- 1 tbsp maple syrup
- ½ tsp baking powder
- ½ tsp pumpkin spice or ground cinnamon
- 2 tbsp chocolate chips or to taste
Preheat oven to 200°C (400°F).
Add the gluten-free oats, pumpkin puree, oat milk, egg, maple syrup, baking powder, and pumpkin spice to a blender and blend until smooth.
Pour the mixture into an oven-safe ramekin.
Sprinkle chocolate chips on top as desired.
Bake for 15 to 20 minutes until set.
