  • 200 g flour
  • 100 g skyr or Greek yogurt for extra creaminess
  • 1 egg
  • 1 tbsp lemon zest from 1 lemon
  • 1 packet baking powder
  • a pinch salt
  • sugar-free apricot jam or your favorite jam
  • sliced almonds
  • powdered sugar for dusting

Instructions for Easy Skyr Cake

  • In a mixing bowl, combine the flour, baking powder, lemon zest, and salt.
  • Crack the egg into the mixture and add the skyr. Stir everything well until you have a smooth and thick batter.
  • Grease a baking pan and pour three-quarters of the batter into it, spreading it evenly. Spread a generous layer of apricot jam on top.
  • Crumble the remaining batter over the jam and sprinkle with sliced almonds.
  • Bake in a preheated oven at 180°C (350°F) for 30 minutes. If the top starts browning too much, cover it lightly with foil. Once done, let it cool before dusting with powdered sugar.

Notes

  • For a stronger almond flavor, add a few drops of almond extract.
  • If you don’t have skyr, Greek yogurt works just as well.
  • Swap apricot jam with your favorite flavor – strawberry, raspberry, or even fig!
  • Want extra indulgence? Drizzle a little honey on top before serving.
