Ingredients
  

Dry Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon salt

Wet Ingredients:

  • 2 cups granulated sugar
  • ½ cup butter softened
  • 1 cup canola oil
  • 4 large eggs separated
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1-2 teaspoons green gel food color or 1-2 tablespoons liquid green food color
  • 1 cup buttermilk room temperature

Instructions
 

Preheat and Prepare Pans:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.

Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking soda, cocoa powder, and salt. Set aside.

Cream Sugar and Butter:

  • In a large mixing bowl, use an electric mixer to cream together the granulated sugar and softened butter until light and fluffy.

Add Wet Ingredients:

  • Gradually add the canola oil to the butter mixture and mix until well combined.
  • Add the egg yolks one at a time, mixing well after each addition.
  • Mix in the vanilla extract and distilled white vinegar.
  • Add the green food color gradually, adjusting to your desired shade of green.

Combine with Dry Ingredients:

  • Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix just until combined. Do not overmix.

Beat Egg Whites:

  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Gently fold the beaten egg whites into the cake batter until fully incorporated.

Bake the Cake:

  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Prepare for Frosting:

  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
