Healthy High Protein Banana Oat Muffins
These high-protein banana oat muffins are a wholesome, delicious treat made without any protein powder. Packed with whole oats, ripe bananas, creamy peanut butter, and crunchy walnuts, they make a perfect guilt-free breakfast or snack. They come together easily in one bowl and are fantastic for meal prep throughout the week.
- 1 tbsp flax meal
- 3 tbsp water
- 2 medium bananas mashed
- 2 tbsp coconut oil melted
- 3 tbsp maple syrup
- ¼ cup smooth peanut butter
- ½ tsp ground cinnamon
- 1 ¾ cups almond milk use 2 cups for extra moist muffins
- 1 tsp vanilla extract
- 1 scoop bovine collagen powder omit for vegan
- 2.5 cups rolled oats
- ⅓ cup walnuts toasted
Preheat the oven to 200°C (160°C fan) and spray a silicone muffin tray with cooking oil.
Mix the flax meal and water in a small cup to combine. Allow to rest for 5 minutes to form a flax egg.
In a mixing bowl, combine the mashed bananas, melted coconut oil, maple syrup, peanut butter, ground cinnamon, almond milk, vanilla extract, and flax egg. Whisk together using a hand balloon whisk.
Stir the collagen powder, rolled oats, and toasted walnuts into the wet mixture until fully incorporated.
Scoop the muffin mixture evenly into the prepared silicone muffin tray.
Bake in the oven for about 20 minutes until set. Allow the muffins to cool in the tray for 10 minutes, then transfer them to a wire rack to firm up completely.
- If you prefer a softer, extra-moist muffin texture, increase the almond milk to 2 cups.
- Omit the collagen powder to easily make these muffins 100% vegan.
