  • 1 cup cottage cheese
  • 1 tbsp honey
  • ½ lemon zest of half
  • ½ tbsp lemon juice freshly squeezed
  • cup blueberries and blackberries combined, for blending
  • blackberries for topping
  • 1 slice lemon optional, for garnish

Blend and Layer

  • Add cottage cheese, honey, lemon zest, and lemon juice to a blender. Blend until completely smooth and creamy, scraping down the sides as needed.
  • Spoon or pour half of the plain mousse mixture into a bowl or measuring cup and set aside.
  • Add the combined blueberries and blackberries to the remaining mixture in the blender. Blend again until smooth and evenly colored.
  • Layer the mousse in a serving glass: add a spoonful of plain mousse, then a spoonful of berry mousse. Repeat layers as desired.
  • Top with fresh blackberries and garnish with a lemon slice if using. Serve right away or chill for about 20 minutes for a thicker texture.

Notes

  • For the smoothest texture, blend longer than you think you need and scrape the blender sides once or twice.
  • Fresh or frozen berries both work; if using frozen, thaw first for the creamiest blend.
  • Chilling for 20–30 minutes makes the mousse thicker and more spoonable.
  • Swap honey with maple syrup if you want a different flavor profile.
