Ingredients
- 1 cup cottage cheese
- 1 tbsp honey
- ½ lemon zest of half
- ½ tbsp lemon juice freshly squeezed
- ⅓ cup blueberries and blackberries combined, for blending
- blackberries for topping
- 1 slice lemon optional, for garnish
Blend and Layer
Add cottage cheese, honey, lemon zest, and lemon juice to a blender. Blend until completely smooth and creamy, scraping down the sides as needed.
Spoon or pour half of the plain mousse mixture into a bowl or measuring cup and set aside.
Add the combined blueberries and blackberries to the remaining mixture in the blender. Blend again until smooth and evenly colored.
Layer the mousse in a serving glass: add a spoonful of plain mousse, then a spoonful of berry mousse. Repeat layers as desired.
Top with fresh blackberries and garnish with a lemon slice if using. Serve right away or chill for about 20 minutes for a thicker texture.
