  • 2 large keto tortillas
  • 2 tablespoons avocado oil divided use
  • 1 pound ground turkey
  • 0.5 onion chopped
  • 1 cup kale chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon cumin powder
  • 4 slices cheddar cheese

Cooking Steps

  • Heat 1 tablespoon of avocado oil in a large skillet over medium heat.
  • Add chopped onion and sauté until translucent, about 3 minutes.
  • Add ground turkey and cook, breaking it up with a spatula, until browned.
  • Mix in chopped kale and cook until wilted.
  • Season with salt, pepper, onion powder, garlic powder, paprika, chili powder, and cumin powder. Stir well to combine.
  • Remove the filling from the skillet and set aside.
  • Add remaining 1 tablespoon of avocado oil to the skillet.
  • Place a tortilla in the pan. Arrange 2 slices of cheddar cheese on half of the tortilla.
  • Spoon half of the turkey mixture over the cheese.
  • Fold the tortilla over to cover the filling.
  • Cook for 2–3 minutes per side until golden brown and cheese is melted.
  • Repeat with the second tortilla and remaining filling.
  • Slice into wedges and serve warm.
