Description

This mince beef burrito bowl is a quick, high-protein dinner packed with seasoned beef, fajita veggies, fresh salsa, and mashed avocado over Mexican rice. Ready in about 20 minutes, it delivers 42g of protein per serving and is easy to customize for lower calories or extra toppings.

Ingredients

For the Beef

  • ½ pepper sliced
  • ½ red onion sliced
  • 300 g low-fat beef mince
  • ½ packet fajita seasoning

For the Salsa

  • ½ red onion finely diced
  • 1 spring onion sliced
  • 1 handful cherry tomatoes quartered
  • to taste salt, pepper, garlic seasoning

For the Mashed Avocado

  • 1 avocado
  • to taste salt, pepper, garlic seasoning, chilli flakes chilli flakes optional

For Serving

  • 1 packet microwave Mexican rice
  • 30 g reduced-fat cheese grated
  • ½ chilli sliced, optional

Instructions

Prep the Toppings

  • Make the salsa by mixing the quartered cherry tomatoes, sliced spring onion, and finely diced red onion together with salt, pepper, and garlic seasoning. Set aside.
  • Mash the avocado and mix with salt, pepper, garlic seasoning, and chilli flakes if using. Set aside.

Cook the Beef

  • Heat a frying pan and cook the sliced pepper and onion for a few minutes until they start to brown.
  • Add the beef mince and fajita seasoning to the pan, and fry everything together until the mince is fully browned.

Assemble the Bowls

  • Heat the microwave Mexican rice according to the packet instructions, then divide it between 2 bowls.
  • Top each bowl with half the fajita mince, the salsa, a third of the mashed avocado, 15g of cheese, and optional chilli slices. Serve immediately.

Notes

  • For fewer calories, skip the avocado and cheese.
  • For more protein, add a spoonful of Greek yogurt on top.
  • Ground turkey or chicken mince can be used instead of beef.
  • The filling can also be wrapped in a warm tortilla to make a burrito instead of a bowl.
