Mocha Energy Balls

Need an extra caffeine punch with your morning coffee? These mocha energy balls are perfect! Medjool dates are soaked in coffee, then blended with nuts, oats, nut butter, and raw cacao powder for an energizing and delicious snack. For an extra touch of indulgence, drizzle with dark chocolate and top with more nuts.

Ingredients
  

Base Ingredients:

  • 1 cup Medjool dates about 12 large, soft ones
  • 4 tbsp strong hot coffee
  • 1 cup cashews
  • 1 cup porridge oats
  • ½ cup nut butter
  • 3 tbsp cacao powder

Optional:

  • Melted dark chocolate for drizzling
  • Additional nuts for topping

Instructions
 

  • Add the Medjool dates to a bowl and pour over the hot coffee. Let them soak for about 20 minutes.
  • Add the soaked dates (along with any remaining coffee) to a food processor. Add the cashews, oats, nut butter, and cacao powder. Blend until the mixture is fully combined and smooth.
  • Roll the mixture into approximately 20 balls.
  • For extra indulgence, drizzle the balls with melted dark chocolate and top with more nuts if desired.
  • Keep the energy balls in a sealed container in the fridge.
