Ingredients
For the Chia Pudding:

150mllight canned coconut milk
200mlwater

30gwhite chocolate or white coconut chocolate
45gcoconut yogurt

Instructions
In a bowl, whisk together the chia seeds, protein powder, maple syrup, coconut milk, and water until smooth.
Cover the mixture and refrigerate for at least 4 hours or overnight, until thickened. Remix and add more water if needed to reach your desired consistency.
Divide the chia pudding between 2-3 jars. You can optionally layer the pudding with extra coconut yogurt for added creaminess.
In a small microwave-safe bowl, combine the white chocolate and coconut yogurt. Melt in the microwave for 30 seconds and stir until fully combined.
Top each chia pudding with the melted white chocolate mixture and set in the fridge to firm up.
