Ingredients
  

For the Chia Pudding:

  • ¼ cup chia seeds 55g
  • ¼ cup vanilla or white chocolate protein powder
  • 2 tbsp maple syrup
  • 150 ml light canned coconut milk
  • 200 ml water

For the Topping:

  • 30 g white chocolate or white coconut chocolate
  • 45 g coconut yogurt
  • Raffaello or shredded coconut for decoration
  • Alternatively, add any toppings of choice

Instructions
 

  • In a bowl, whisk together the chia seeds, protein powder, maple syrup, coconut milk, and water until smooth.
  • Cover the mixture and refrigerate for at least 4 hours or overnight, until thickened. Remix and add more water if needed to reach your desired consistency.
  • Divide the chia pudding between 2-3 jars. You can optionally layer the pudding with extra coconut yogurt for added creaminess.
  • In a small microwave-safe bowl, combine the white chocolate and coconut yogurt. Melt in the microwave for 30 seconds and stir until fully combined.
  • Top each chia pudding with the melted white chocolate mixture and set in the fridge to firm up.
  • Garnish with Raffaello, shredded coconut, or your choice of toppings before serving. Enjoy!

Notes

Feel free to customize the pudding with different toppings such as fresh fruits, nuts, or granola.
Adjust the sweetness to your preference by adding more or less maple syrup.
For a vegan option, use dairy-free white chocolate.
