Ingredients
For the Bliss Balls:
120gfrozen raspberries
50ml3 tbsp maple syrup (or sugar-free version)
90gfinely shredded or desiccated coconut
50-60gvegan white chocolate or vanilla protein powder
For Coating:
90-100gmelted chocolate of choicewhite or milk chocolate
1tspcoconut oiloptional, for a smoother chocolate coating
Instructions
In a food processor, blitz the frozen raspberries, maple syrup, shredded coconut, and protein powder until well combined.
Prepare a tray or plate with baking paper. Roll the raspberry mixture into balls (using cooking gloves helps). If the mixture is too wet, refrigerate for a few minutes or add a bit more coconut or protein powder to firm up.
Place the balls into the freezer for an hour or until set.
Melt your chocolate with a teaspoon of coconut oil if desired, for a runnier consistency. Dip each ball into the melted chocolate to coat.
Set the coated balls back in the fridge for at least 20 minutes to harden.
Serve and enjoy! Store any remaining bliss balls in the fridge.
