Ingredients

For the Bliss Balls:

  • 120 g frozen raspberries
  • 50 ml 3 tbsp maple syrup (or sugar-free version)
  • 90 g finely shredded or desiccated coconut
  • 50-60 g vegan white chocolate or vanilla protein powder

For Coating:

  • 90-100 g melted chocolate of choice white or milk chocolate
  • 1 tsp coconut oil optional, for a smoother chocolate coating

Instructions

  • In a food processor, blitz the frozen raspberries, maple syrup, shredded coconut, and protein powder until well combined.
  • Prepare a tray or plate with baking paper. Roll the raspberry mixture into balls (using cooking gloves helps). If the mixture is too wet, refrigerate for a few minutes or add a bit more coconut or protein powder to firm up.
  • Place the balls into the freezer for an hour or until set.
  • Melt your chocolate with a teaspoon of coconut oil if desired, for a runnier consistency. Dip each ball into the melted chocolate to coat.
  • Set the coated balls back in the fridge for at least 20 minutes to harden.
  • Serve and enjoy! Store any remaining bliss balls in the fridge.

Notes

Adjust the sweetness depending on your chocolate and personal preference.
Use your favorite chocolate, such as Lindt no sugar milk chocolate, or try different protein flavors like white chocolate malt or vanilla buttercream.
