Description

This high-fiber roasted vegetable grain bowl is the ultimate easy sheet pan meal for weeknight dinners. Sweet potatoes, carrots, cauliflower, and red onion are seasoned with taco spices and roasted to perfection alongside crunchy almonds. Tossed with warm grains and a fresh herb lime dressing, it offers a delicious and gut-friendly meal with minimal cleanup.

Ingredients

For the Vegetables & Grains

  • 1 packet cooked grains such as Merchant Gourmet
  • 400 g cauliflower florets
  • 1 sweet potato peeled and diced
  • 1 large carrot peeled and diced
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 red onion peeled and thinly sliced
  • 1 tbsp taco seasoning
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ¼ cup almonds chopped

For the Dressing

  • ¼ cup olive oil
  • ½ lime juiced, 1/2 to 1 lime to taste
  • 1 tsp Dijon mustard
  • 1 tbsp fresh basil finely chopped
  • 1 tbsp fresh parsley finely chopped
  • salt and pepper to taste

Instructions

  • Preheat the oven to 200°C / 180°C fan (400°F) and line a baking tray with parchment paper.
  • Add the diced sweet potato and carrot to the tray with 1 tablespoon of olive oil, salt, and pepper. Roast for 15 minutes.
  • Add the cauliflower florets, garlic, sliced red onion, and taco seasoning to the tray and toss to combine evenly. Cook for a further 20 minutes, adding the chopped almonds during the last 5 minutes of roasting.
  • While the vegetables roast, whisk together the dressing ingredients in a small bowl: olive oil, lime juice, Dijon mustard, fresh basil, fresh parsley, salt, and pepper.
  • Warm the grain packet in the microwave according to package instructions.
  • Toss the warm grains, roasted vegetables, and toasted nuts with the dressing. Garnish with additional fresh herbs, salt, and pepper to taste before serving.

Notes

  • Keep a close eye on the almonds during the last 5 minutes of baking to ensure they toast nicely without burning.
  • This recipe works great with any mix of pre-cooked grains like quinoa, farro, brown rice, or a grain blend.
