Salted Caramel Almond Yogurt Clusters

These Salted Caramel Almond Yogurt Clusters are a healthy, dairy-free, and refined sugar-free twist on a classic dessert. With a rich caramel flavor from blended dates, crunchy almonds, and a drizzle of dark chocolate, they’re the perfect treat to keep in your freezer for when those sweet cravings hit.

Ingredients
  

  • 1 cup yogurt of choice I used dairy-free
  • 1 tsp vanilla extract
  • ¼ cup cacao nibs
  • 5-8 medjool dates blended until smooth (be sure to soak them in hot water for a few minutes first so they blend easily)
  • handful of chopped almonds
  • flaky salt
melted dark chocolate

Instructions
 

  • In a bowl, combine yogurt, vanilla, cacao nibs, chopped almonds and blended dates until well combined.
  • Scoop the mixture onto a parchment lined baking sheet.
  • Freeze for about 1 hour.
  • Drizzle melted dark chocolate over each cluster.
  • Freeze for another 10-15 minutes until the chocolate sets.

Notes

  • Soaking Dates: Make sure to soak the dates in hot water for a few minutes before blending them; it makes them much easier to blend.
  • Storage: Keep these clusters in the freezer, but don’t expect them to last long—they’re that good!
