  • 130 g spelt flour
  • 30 g honey
  • 25 g butter melted and cooled
  • 1 egg
  • 1 teaspoon vanilla extract

  • Melt the butter and let it cool slightly.
  • Mix the butter with honey and vanilla. Pour the wet ingredients into the dry ingredients and mix with a spatula until a smooth dough forms.
  • Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Preheat your oven to 180°C (356°F).
  • Roll out the dough between two sheets of parchment paper. Using a round cookie cutter, shape the biscuits and place them on a baking tray lined with a baking mat.
  • Bake for 12 to 15 minutes or until golden.

Notes

  • For a crunchy touch, add some seeds (flax, sesame, etc.) to the dough.
  • For a more indulgent version, incorporate dark chocolate chips.
  • Adjust the size of the biscuits according to your preference.
