Ingredients
  

For the Hotdogs:

  • 5 Pepper Valley smoked chicken sausages
  • 5 hot dog buns

For the Cabbage Slaw:

  • 1 ½ cups red cabbage shredded
  • 1 cup carrots shredded
  • ½ green apple julienned (cut into thin sticks)*
  • ¼ cup cilantro leaves

Dressing for the Cabbage Slaw:

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons coconut vinegar
  • 3 teaspoons Kist coconut treacle
  • 1 clove garlic smashed
  • Salt and pepper to taste

For the Spicy Mayo:

  • cup Kewpie mayonnaise
  • 2-4 teaspoons Sriracha chili sauce or more, if you like it extra hot
  • 1 teaspoon coconut vinegar

Instructions
 

Prepare the Cabbage Slaw:

  • In a large bowl, combine red cabbage, carrots, apples, and cilantro. Set aside.
  • In a small bowl, whisk together olive oil, coconut vinegar, coconut treacle, smashed garlic, salt, and pepper until well combined. Taste and adjust seasoning as needed.
  • Pour the dressing over the slaw mixture and toss to coat. Set aside.

Make the Spicy Mayo:

  • In a small bowl, mix together Kewpie mayonnaise, Sriracha chili sauce, and coconut vinegar until smooth. Set aside.

Cook the Sausages:

  • Fry the smoked chicken sausages in a pan until they are golden brown and heated through.

Assemble the Hotdogs:

  • Slice the hot dog buns down the center.
  • Place a fried sausage in each bun, top generously with the prepared cabbage slaw, and drizzle with the spicy mayo.

Serve:

  • Serve immediately with a side of crispy French fries for a perfect meal. Enjoy the burst of flavors in every bite!

Notes

  • To keep the green apple from browning, soak the julienned apple pieces in a mixture of 1 cup water and 1 tablespoon sugar until ready to use. Drain well before adding to the slaw.
  • Adjust the Sriracha sauce in the spicy mayo according to your heat preference.
