Ingredients

For the Meatballs

  • 1 lb ground beef
  • 1 lb ground chicken or turkey
  • ½ cup Panko breadcrumbs optional
  • ½ small onion diced
  • 2 egg yolks large
  • ¼ tsp ground allspice
  • ¼ tsp ground nutmeg
  • to taste salt
  • to taste black pepper freshly ground

For the Gravy

  • 6 tbsp unsalted butter
  • cup all-purpose flour
  • 4 cups beef broth
  • ½ cup sour cream
  • to taste salt
  • to taste black pepper freshly ground
  • 2 tbsp fresh dill chopped, for garnish

Instructions

Make the Meatballs

  • In a large bowl, combine diced onion, ground beef, ground chicken, breadcrumbs (if using), egg yolks, allspice, nutmeg, salt, and pepper. Mix until just combined.
  • To test seasoning, microwave a small piece of the mixture and taste. Adjust seasoning if needed.
  • Roll the mixture into 1–1.5 inch meatballs.
  • Heat olive oil in a large skillet over medium heat. Add meatballs in batches and brown on all sides, about 4–5 minutes per batch. Transfer to a paper towel-lined plate.

Make the Gravy & Finish

  • In the same skillet, melt butter over medium heat. Whisk in flour and cook for about 1 minute until golden.
  • Gradually whisk in beef broth, whisking constantly to avoid lumps. Simmer for 1–2 minutes until slightly thickened.
  • Stir in sour cream. Season with salt and pepper to taste.
  • Return browned meatballs to the pan. Reduce heat to low and simmer for another 4–5 minutes until meatballs are cooked through and sauce is thickened.
  • Garnish with chopped dill before serving.

Notes

  • To make this gluten-free, use gluten-free Panko and a 1:1 gluten-free flour blend.
  • For a lower-fat version, substitute sour cream with plain Greek yogurt.
  • You can freeze the uncooked meatballs for later use.
  • Test the meatball seasoning by microwaving a small portion before cooking the whole batch.
