For the Blondies:
- 2 eggs
- 200 g unsalted butter melted
- 155 g brown sugar
- 55 g white sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- ½ teaspoon baking soda
- 340 g wheat flour
- 80 g white chocolate chopped
- 140 g fresh strawberries diced
For the Strawberry Jam:
- 180 g fresh or frozen strawberries chopped
- 60 g white sugar
- 2 teaspoons lemon juice
For the Cream Cheese Frosting:
- 350 g cream cheese at room temperature
- 60 g heavy cream
- 1 teaspoon vanilla extract
- 60 g powdered sugar
To Prepare the Strawberry Jam:
In a saucepan, cook the strawberries, sugar, and lemon juice over medium heat, stirring continuously until the mixture thickens. Set aside to cool.
To Make the Blondies:
Preheat the oven to 175°C (350°F). Grease and line a 9x13-inch baking pan with parchment paper.
In a large mixing bowl, combine the melted butter, brown sugar, and white sugar until well blended.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and salt.
Gently fold in the flour and baking soda until just combined.
Add the chopped white chocolate and diced strawberries, mixing gently to incorporate.
Pour the batter into the prepared pan, spreading it evenly. Add additional strawberry pieces on top if desired.
Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes.
To Make the Cream Cheese Frosting:
In a medium bowl, beat the cream cheese and powdered sugar until smooth using an electric mixer on medium speed.
Add the vanilla extract and beat until fully incorporated.
Gradually add the heavy cream, beating at medium speed until the desired consistency is reached.
Once the blondies have cooled, spread the cream cheese frosting over them.
Drizzle the cooled strawberry jam on top, slice into portions, and serve.
- Ensure that the cream cheese is at room temperature before mixing to achieve a smooth frosting.
- You can use fresh or frozen strawberries for the jam; just be sure to thaw frozen strawberries first.
