Ingredients

For the Blondies:

  • 2 eggs
  • 200 g unsalted butter melted
  • 155 g brown sugar
  • 55 g white sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 340 g wheat flour
  • 80 g white chocolate chopped
  • 140 g fresh strawberries diced

For the Strawberry Jam:

  • 180 g fresh or frozen strawberries chopped
  • 60 g white sugar
  • 2 teaspoons lemon juice

For the Cream Cheese Frosting:

  • 350 g cream cheese at room temperature
  • 60 g heavy cream
  • 1 teaspoon vanilla extract
  • 60 g powdered sugar

Instructions

To Prepare the Strawberry Jam:

  • In a saucepan, cook the strawberries, sugar, and lemon juice over medium heat, stirring continuously until the mixture thickens. Set aside to cool.

To Make the Blondies:

  • Preheat the oven to 175°C (350°F). Grease and line a 9x13-inch baking pan with parchment paper.
  • In a large mixing bowl, combine the melted butter, brown sugar, and white sugar until well blended.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and salt.
  • Gently fold in the flour and baking soda until just combined.
  • Add the chopped white chocolate and diced strawberries, mixing gently to incorporate.
  • Pour the batter into the prepared pan, spreading it evenly. Add additional strawberry pieces on top if desired.
  • Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes.

To Make the Cream Cheese Frosting:

  • In a medium bowl, beat the cream cheese and powdered sugar until smooth using an electric mixer on medium speed.
  • Add the vanilla extract and beat until fully incorporated.
  • Gradually add the heavy cream, beating at medium speed until the desired consistency is reached.
  • Once the blondies have cooled, spread the cream cheese frosting over them.
  • Drizzle the cooled strawberry jam on top, slice into portions, and serve.

Notes

  • Ensure that the cream cheese is at room temperature before mixing to achieve a smooth frosting.
  • You can use fresh or frozen strawberries for the jam; just be sure to thaw frozen strawberries first.
