Butternut Brioche Recipe

Chef:

I still remember the first time I baked this brioche. It was a rainy afternoon, and my grandmother was visiting. The house smelled of cinnamon tea, and she was sitting by the window, humming a tune from her youth. I wanted to bake something warm, comforting, and different from my usual bread recipes. That’s when I stumbled upon the idea of adding butternut squash to my brioche. A little experiment, a little curiosity – and it turned out to be one of the softest, most delightful breads I had ever made!

Why Butternut in Brioche?

If you’ve never baked with butternut squash before, you’re in for a treat! It’s naturally sweet, creamy, and packed with moisture, making it a perfect addition to brioche. By replacing part of the butter with butternut puree, we get a lighter texture while still keeping the richness intact. Plus, it’s a great way to sneak in some extra fiber and nutrients into your baked goods!

What You’ll Need

  • 500g flour (preferably brioche flour for best texture)
  • 130g butternut puree (steamed and blended smooth)
  • 2 eggs
  • 200ml warm milk
  • 30g butter (softened)
  • 1 packet dry yeast
  • 3 tbsp sugar
  • 1 tsp salt

Let’s Bake!

Step 1: Mixing the Dough

In a large bowl, mix the flour and butternut puree together. The dough might look a little sticky at first, but that’s normal – trust the process!

Add the eggs, warm milk, sugar, and yeast. Start kneading (by hand or using a stand mixer) until the dough comes together.

Now, add the softened butter and continue kneading until the dough becomes smooth and elastic. This might take about 10 minutes, but it’s worth it!

Step 2: The First Rise

Form the dough into a ball, cover it with a clean kitchen towel, and let it rest in a warm place for 2 hours or until it doubles in size.

Step 3: Shaping and Second Rise

Once the dough has risen, punch it down gently to release the air. Shape it into a loaf or divide it into smaller buns – whatever you prefer! Place the shaped dough on a baking tray, cover, and let it rest again for 30 minutes.

Step 4: Baking to Perfection

Preheat your oven to 180°C (350°F).

Brush the top of the brioche with a little milk for a golden finish. Bake for 30 minutes, or until the top is beautifully golden and the bread sounds hollow when tapped.

The Moment of Joy!

When I pulled that first loaf out of the oven, my grandmother smiled and said, “It smells like love.” And truly, it did! The butternut gave it such a lovely aroma, a hint of natural sweetness, and the perfect softness. We sliced it warm, spread a little butter, and enjoyed it with tea, laughing over old memories.

How to Enjoy Your Butternut Brioche?

  • Serve it warm with honey or jam.
  • Make the fluffiest French toast with it the next morning!
  • Pair it with a cup of spiced chai for a cozy evening treat.

I hope you try this recipe and experience the same warmth and comfort it brings to my home. If you do, let me know how it turned out! Happy baking! ❤️
