Cajun Chicken and Rice Skillet with Cheese
This Cajun chicken fried rice is a quick and flavorful one-pan meal. Seasoned chicken is cooked with vegetables, rice, and tomatoes, then topped with melted cheese. Perfect for a weeknight dinner and easy to meal prep. Serves 4 and ready in under an hour.
- 600 g chicken breast
- 1.5 each pepper diced
- 1.5 each red onion diced
- 2 packets microwave rice basmati or cajun flavour
- 1 tin chopped tomatoes
- 4 tsp Cajun seasoning
- salt and black pepper to taste
- 3 cloves garlic crushed
- 100 g reduced fat grated cheese
- 200 ml water
Season the chicken with Cajun seasoning and airfry or bake until cooked through. Airfry for 25-30 minutes at 190°C or bake for 30-35 minutes at 200°C. Alternatively, dice and pan-fry the chicken.
Allow the cooked chicken to cool slightly while preparing the rest of the dish.
In a large pan, fry the onion, peppers, and garlic until browned. Add the rice, chopped tomatoes, 2 tsp Cajun seasoning, salt, pepper, and water. Mix and simmer for 5-10 minutes.
Shred or cut the chicken and add to the pot. Turn on the grill if melting cheese under it.
Mix the chicken into the rice until hot and rice is softened. Top with cheese and serve immediately, or place under grill to melt.
Divide into 4 servings and enjoy. For meal prepping, reheat thoroughly before eating.
- Ensure chicken is fully cooked to an internal temperature of 165°F.
