- 1.5 each pepper diced
- 1.5 each red onion diced
- 2 packets microwave rice basmati or cajun flavour
- 1 tin chopped tomatoes
- 4 tsp Cajun seasoning
- salt and black pepper to taste
- 3 cloves garlic crushed
- 100 g reduced fat grated cheese
- 200 ml water
Instructions
- Season the chicken with Cajun seasoning and airfry or bake until cooked through. Airfry for 25-30 minutes at 190°C or bake for 30-35 minutes at 200°C. Alternatively, dice and pan-fry the chicken.
- Allow the cooked chicken to cool slightly while preparing the rest of the dish.
- In a large pan, fry the onion, peppers, and garlic until browned. Add the rice, chopped tomatoes, 2 tsp Cajun seasoning, salt, pepper, and water. Mix and simmer for 5-10 minutes.
