Chocolate Protein Pancakes

- ¾ cup oat flour or all-purpose flour 90g
- 2 tsp baking powder
- 2 tbsp cacao powder
- 2 tbsp chocolate
- 2-3 tbsp sugar I used coconut sugar
- 1 cup dairy-free milk
- 2 tbsp coconut oil
- dash of vanilla
- pinch of salt
- ½ cup chocolate chips
Add all of the pancake ingredients to a large bowl and mix well.
Grease the pan with coconut oil and add about 1/4 cup of batter to the pan for each pancake. You will get about 5-6 pancakes with this recipe.
Cook each pancake for 2-4 minutes on each side.
Melt some dark chocolate and pour over the pancakes. Optional: add fruit of choice- I like to add banana coins.
- Protein Boost: Feel free to add a scoop of your favorite protein powder to the mix for an extra protein punch.
- Customize: Swap out chocolate chips for nuts or dried fruit if you want to change things up.
