There’s just something magical about starting the day with chocolate, isn’t there? For me, mornings are all about little moments of joy, and nothing brings that happiness like a stack of gooey chocolate protein pancakes.

I remember the first time I made these, I was having one of those mornings where everything felt just a bit off. You know the kind, right? But as soon as I smelled that warm, chocolatey goodness wafting through my kitchen, it was like all my worries melted away with the chocolate chips.

These pancakes have become my go-to comfort food, especially when I need a pick-me-up or just want to indulge without feeling guilty. Plus, they’re packed with plant-based proteinβ€”8 grams per serving, to be exactβ€”so I can feel good about what I’m eating, even if it feels a little decadent.

Chocolate Protein Pancakes

Ingredients

  • 3/4 cup oat flour or all-purpose flour (90g)
  • 2 tsp baking powder
  • 2 tbsp cacao powder
  • 2 tbsp chocolate
  • 2-3 tbsp sugar (I used coconut sugar)
  • 1 cup dairy-free milk
  • 2 tbsp coconut oil
  • dash of vanilla
  • pinch of salt
  • 1/2 cup chocolate chips

Directions

  1. Mix It Up: In a large bowl, combine all the pancake ingredients. Stir well until everything is perfectly blended.
  2. Grease & Pour: Heat your pan and grease it with a bit of coconut oil. Pour about 1/4 cup of batter for each pancake. This recipe makes about 5-6 pancakes.
  3. Cook to Perfection: Cook each pancake for 2-4 minutes on each side, or until they’re beautifully golden and cooked through.
  4. The Finishing Touch: Melt some dark chocolate and drizzle it over the pancakes. Want to go the extra mile? Add your favorite fruit on topβ€”I personally love the sweet touch of banana coins.
