Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it well.
In a small bowl, combine all wet ingredients (eggs, vegetable oil, melted vegan butter, and vanilla extract) except the yogurt, and set aside.
In a separate bowl, whisk together the dry ingredients (plain flour, coconut sugar, baking powder, and salt).
Toss the chopped apples with 2 tsp ground cinnamon. In another small bowl, mix 1/3 cup coconut sugar with 1 tbsp ground cinnamon for the cinnamon sugar mixture.
Add the wet mixture into the dry ingredients and mix gently until no flour is visible, then fold in the vegan coconut yogurt.
Pour a little less than half of the batter into the prepared loaf pan.
Sprinkle a thin layer of the cinnamon sugar mixture over the batter layer.
Add and evenly spread the spiced chopped apples on top.
Cover with the remaining batter and sprinkle the top with the rest of the cinnamon sugar mixture.
Bake for 50 to 55 minutes until golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before slicing.
