Description

This moist and tender dairy-free cinnamon apple loaf cake is packed with warm autumn flavors. It features layers of cinnamon sugar and sweet spiced apples folded into a soft, golden loaf. Perfect for a cozy breakfast, afternoon snack, or dessert paired with hot tea or coffee.

Ingredients

Cake Batter

  • 225 g plain flour
  • 180 g coconut sugar can use half regular granulated sugar and half coconut sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 3 large eggs
  • 3 tbsp vegetable oil
  • 100 g vegan butter melted
  • 2 tsp vanilla extract
  • 100 g vegan coconut yogurt or dairy-free sour cream

Apple Filling

  • 2 apples peeled and chopped
  • 2 tsp ground cinnamon

Cinnamon Sugar Mixture

  • cup coconut sugar
  • 1 tbsp ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it well.
  • In a small bowl, combine all wet ingredients (eggs, vegetable oil, melted vegan butter, and vanilla extract) except the yogurt, and set aside.
  • In a separate bowl, whisk together the dry ingredients (plain flour, coconut sugar, baking powder, and salt).
  • Toss the chopped apples with 2 tsp ground cinnamon. In another small bowl, mix 1/3 cup coconut sugar with 1 tbsp ground cinnamon for the cinnamon sugar mixture.
  • Add the wet mixture into the dry ingredients and mix gently until no flour is visible, then fold in the vegan coconut yogurt.
  • Pour a little less than half of the batter into the prepared loaf pan.
  • Sprinkle a thin layer of the cinnamon sugar mixture over the batter layer.
  • Add and evenly spread the spiced chopped apples on top.
  • Cover with the remaining batter and sprinkle the top with the rest of the cinnamon sugar mixture.
  • Bake for 50 to 55 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before slicing.

Notes

  • Make sure to cool the loaf completely before slicing to keep clean, even slices.
  • Using coconut yogurt adds great moisture, but dairy-free sour cream works equally well.
