Eight slices of pure autumn bliss — that’s what you get from this dairy-free cinnamon apple loaf cake, and honestly, not a single one will last more than a day in my house. I’ve made this recipe three times this week already, partly for “testing purposes” and partly because my family won’t stop asking for it.
The combination of tender, golden crumb, ribbons of cinnamon sugar, and sweet spiced apple chunks makes this one of those bakes that fills your entire kitchen with the kind of warmth that only autumn can deliver.
What sets this loaf apart from your typical apple cake is the layering technique. Instead of just folding everything into one bowl and hoping for the best, we build this cake in layers — batter, cinnamon sugar, spiced apples, more batter, and a final crown of cinnamon sugar on top.
The result is those gorgeous swirled pockets of cinnamon sweetness throughout, with chunks of apple that stay perfectly tender instead of sinking to the bottom. And yes, the entire thing is completely dairy-free, which means everyone at the table can enjoy a thick slice without worry.
If you’ve been following along with some of my other cozy bakes, you already know I have a serious soft spot for cinnamon and apple together. This loaf takes everything I love about a classic cinnamon apple crisp and wraps it up in a soft, sliceable cake that’s perfect with your morning coffee or as an after-dinner treat.
Trust me, once you see how simple this is to throw together, it’s going straight into your regular rotation.
What Makes This Dairy-Free Apple Loaf So Moist?
The secret weapon here is the vegan coconut yogurt. It does double duty in this recipe — it adds a subtle tang that balances the sweetness of the coconut sugar, and it keeps the crumb unbelievably moist for days.
I’ve tested this with both coconut yogurt and dairy-free sour cream, and both work beautifully. The coconut yogurt gives a slightly more tender, almost velvety texture, while the dairy-free sour cream produces a crumb that’s a touch firmer but still wonderfully soft.
The melted vegan butter and vegetable oil combination is another trick worth noting. Butter brings that rich, bakery-style flavor, while the oil ensures the loaf stays moist even on day two and three.
Using both gives you the best of both worlds — flavor and texture that holds up beautifully.
Can I Use Regular Sugar Instead of Coconut Sugar?
Absolutely! Coconut sugar has a lovely caramel-like depth that pairs gorgeously with cinnamon and apple, but regular granulated sugar works just fine.
If you want to ease into it, try a half-and-half blend — half granulated sugar and half coconut sugar. That’s actually one of my favorite ways to make it because you get that subtle toffee note without going fully into coconut sugar territory.
The loaf will still turn out golden and delicious either way.
One thing I’d encourage you not to skip, though, is the cinnamon sugar layering. I know it might seem like an extra step, but mixing that 1/3 cup of coconut sugar with a full tablespoon of ground cinnamon and sprinkling it between the batter layers is what creates those beautiful ribbons of spiced sweetness inside the loaf.
It transforms the cake from “good” to “people will literally ask you for the recipe” good.
Best Apples to Use for This Loaf Cake
You want apples that hold their shape when baked and bring a nice balance of sweetness and tartness. My top picks are Honeycrisp, Granny Smith, Gala, or Braeburn.
Honeycrisp are my personal favorite here because they stay juicy and hold up beautifully in the oven without turning to mush. Granny Smith will give you a slightly tangier result, which is lovely if you prefer less sweetness.
Peel and chop them into roughly half-inch pieces — you want them small enough to distribute evenly throughout the loaf but large enough that you get a satisfying burst of apple in every bite. Tossing them with ground cinnamon before folding them into the batter is a small step that makes a huge difference.
Each apple piece gets coated in warm spice, so there are no bland, naked chunks hiding in your cake.
How to Get Clean Slices Every Time
This is the part where I beg you — please let the loaf cool completely before slicing. I know, I know.
The smell is going to be absolutely maddening, and you’re going to want to dig in immediately. But if you cut into this while it’s still warm, the crumb will be too soft and you’ll end up with delicious but messy pieces instead of those clean, beautiful slices with visible layers of cinnamon sugar and apple.
Once it’s fully cooled, use a sharp serrated knife and a gentle sawing motion. If you’re really impatient (no judgment — I’ve been there), pop it in the fridge for 20 to 30 minutes after it reaches room temperature.
The chill firms everything up just enough to give you bakery-window-worthy slices. It’s the same principle I use for my fluffy red velvet yogurt sheet cake — a little patience goes a long way toward presentation.
Storage Tips and Make-Ahead Options
This loaf keeps remarkably well. Wrapped tightly or stored in an airtight container at room temperature, it stays moist and flavorful for up to three days.
If your kitchen runs warm, you can refrigerate it for up to five days — just let individual slices come to room temperature before serving, or warm them gently in the microwave for about 15 seconds. A quick warm-up brings back that fresh-from-the-oven magic.
You can also freeze this loaf beautifully. Wrap the fully cooled cake tightly in plastic wrap, then in foil, and freeze for up to three months.
Thaw it overnight in the fridge or on the counter for a few hours. It’s a wonderful recipe to make ahead if you’re hosting brunch or need a last-minute dessert that tastes like you spent all afternoon baking.
Easy Variations to Try
Once you’ve made the base recipe, there’s plenty of room to play. Here are a few ideas I’ve tried and loved:
✦Walnut or Pecan Version: Fold 1/2 cup of chopped walnuts or pecans into the batter along with the apples for a nutty crunch that pairs beautifully with the cinnamon.
✦Maple Glaze: Drizzle a simple maple glaze over the cooled loaf by whisking together 1 cup of powdered sugar with 2 tablespoons of maple syrup and a splash of dairy-free milk. It takes this cake into dessert territory in the best possible way.
✦Pear Swap: Not an apple person? Ripe pears work wonderfully here and bring a slightly more delicate, floral sweetness to the loaf.
✦Extra Spice: Add a pinch of nutmeg and ground ginger to the dry ingredients for a more complex spice profile that tastes like autumn in every bite.
If you love baking with apples as much as I do, you should also try these brown butter gluten-free apple muffins — they use a similar flavor combination but in a perfectly portable muffin form that’s great for grab-and-go mornings.
Why This Recipe Works for Everyone
One of the things I love most about this loaf is how inclusive it is. Being dairy-free means it works for anyone with a dairy allergy or lactose intolerance, and because there’s no butter or milk in the traditional sense, you don’t sacrifice a single bit of flavor or texture.
The vegan butter and coconut yogurt do all the heavy lifting, and the result is a cake that honestly tastes just as rich and indulgent as any dairy-full version I’ve ever had.
Whether you’re baking for a crowd with mixed dietary needs or you simply want a gorgeous, cinnamon-scented loaf to slice into on a quiet Sunday morning, this dairy-free cinnamon apple loaf cake delivers. It’s the kind of recipe that makes your whole house smell incredible, looks stunning on a cutting board, and brings everyone to the kitchen asking, “Is that ready yet?”

Pour a little less than half of the batter into the prepared loaf pan.
Sprinkle a thin layer of the cinnamon sugar mixture over the batter layer.
Add and evenly spread the spiced chopped apples on top.
Cover with the remaining batter and sprinkle the top with the rest of the cinnamon sugar mixture.
Bake for 50 to 55 minutes until golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before slicing.
Notes
Make sure to cool the loaf completely before slicing to keep clean, even slices.
Using coconut yogurt adds great moisture, but dairy-free sour cream works equally well.
