Ingredients
  

  • 2 cans organic chickpeas drain one can and reserve water from the second can
  • ¾ cup good quality tahini
  • 1 large lemon juiced
  • reserved chickpea juice use half first, then add more if desired for creamier consistency
  • 3-4 cloves garlic
  • 1-2 tsp salt
  • 1 tsp pepper
  • 2 tsp cumin optional
  • 3-4 cubes ice

Instructions
 

  • In a high-speed blender, add chickpeas, tahini, lemon juice, half of the reserved chickpea juice, garlic, salt, pepper, cumin (if using), and ice cubes.
  • Blend on high until smooth and creamy. Add more chickpea juice if a creamier consistency is desired.
  • Spoon the hummus into a shallow serving bowl. Decorate with roasted chickpeas, rosemary, fresh herbs, lemon wedges, a drizzle of high-quality olive oil, crushed red pepper, and olives for a festive look.
  • Serve with warm pita bread or fresh vegetables.
