Description

These Matcha Pistachio Balls are a quick and healthy snack, packed with the goodness of cashews, pistachios, Medjool dates, and matcha powder. They are easy to make and perfect for a mid-day energy boost. The balls are rolled in chopped pistachios for an added crunch and visual appeal.

Ingredients

  • ¾ cup raw cashews
  • ¼ cup raw pistachios
  • 12 Medjool dates pitted
  • ¼ cup shredded coconut
  • 2 TL matcha powder
  • 1 tbsp coconut oil
  • to taste chopped pistachios for rolling

Instructions

  • Place all ingredients except the chopped pistachios in a food processor.
  • Process until finely chopped and blended.
  • Using a teaspoon, scoop out balls of mixture and roll between your hands to form evenly sized balls.
  • Roll each ball through the chopped pistachios, pressing them firmly into the balls.
  • Place the balls in the fridge for about 15 minutes to set.
