- ¾ cup raw cashews
- ¼ cup raw pistachios
- 12 Medjool dates pitted
- ¼ cup shredded coconut
- 2 TL matcha powder
- 1 tbsp coconut oil
- to taste chopped pistachios for rolling
Place all ingredients except the chopped pistachios in a food processor.
Process until finely chopped and blended.
Using a teaspoon, scoop out balls of mixture and roll between your hands to form evenly sized balls.
Roll each ball through the chopped pistachios, pressing them firmly into the balls.
Place the balls in the fridge for about 15 minutes to set.
