Mixed Fruit Plum Cake

Ingredients
  

For the Cake

  • 250 ml plain or vanilla yogurt
  • 2 eggs
  • juice of 1 lemon
  • grated peel of 1 lemon
  • 270 g farina (flour)
  • 100 g sugar
  • 100 ml seed oil
  • 1 sachet of baking powder
  • 200 g mixed fruit strawberries, raspberries, peaches, blueberries, etc.

For Garnish

  • 30 g muesli for garnish
  • granulated sugar to taste, for garnish
  • fresh fruit for decoration

Instructions
 

Prepare the Batter

  • Beat the eggs with sugar until light and fluffy.
  • Add the yogurt, oil, lemon juice, and grated peel, and mix well.
  • Gradually add the flour and baking powder, stirring until you have a smooth batter.

Assemble the Cake

  • Pour the mixture into a plum cake mold lined with baking paper.
  • Top with the fruit, sprinkle with muesli and granulated sugar.

Bake and Decorate

  • Bake in a fan oven at 170°C for 45 minutes.
  • Once baked, allow the cake to cool and decorate with fresh fruit before serving.

Notes

  • Feel free to swap the fruits with your favorites! Try using cherries, blackberries, or kiwi for a twist.
  • For an extra crunch, you can also add chopped nuts to the muesli topping.
