For the Cake
- 250 ml plain or vanilla yogurt
- 2 eggs
- juice of 1 lemon
- grated peel of 1 lemon
- 270 g farina (flour)
- 100 g sugar
- 100 ml seed oil
- 1 sachet of baking powder
- 200 g mixed fruit strawberries, raspberries, peaches, blueberries, etc.
For Garnish
- 30 g muesli for garnish
- granulated sugar to taste, for garnish
- fresh fruit for decoration
Prepare the Batter
Beat the eggs with sugar until light and fluffy.
Add the yogurt, oil, lemon juice, and grated peel, and mix well.
Gradually add the flour and baking powder, stirring until you have a smooth batter.
Assemble the Cake
Pour the mixture into a plum cake mold lined with baking paper.
Top with the fruit, sprinkle with muesli and granulated sugar.
Bake and Decorate
Bake in a fan oven at 170°C for 45 minutes.
Once baked, allow the cake to cool and decorate with fresh fruit before serving.
