Pistachios Beans Fondant Recipe
A unique, protein-rich fondant combining the creaminess of pistachios with the earthy flavor of borlotti beans. This flourless dessert is perfect for those seeking a healthy indulgence, with a light touch of cocoa and no added sugar. Optionally sweetened to taste.
Fondant Ingredients
- 150 g cooked borlotti beans
- 1 egg
- 6 g unsweetened cocoa powder
- 20 g milk
- 15 g pistachio powder
- 10 g pistachio puree
- 5 g baking powder
- 1 pinch fleur de sel
Preheat the oven to 180°C (350°F).
Blend all the ingredients together until you have a smooth, homogeneous batter.
Pour the batter into a mold lined with parchment paper.
Bake for 30 minutes.
Let the fondant cool completely.
Sprinkle with vanilla icing sugar or prepare a chocolate icing and top with crushed pistachios.
