Keto Copycat Cranberry Bliss Bars Recipe

undefined

The warm scent of orange and vanilla filling the kitchen as these bars bake is exactly the kind of holiday magic you want in your home — and this version skips all the sugar without skipping a single bit of flavor. Most copycat Cranberry Bliss Bar recipes rely on white flour, white sugar, and a mountain of powdered sugar in the frosting.

This one swaps in almond flour, monk fruit sweetener, and a tangy cream cheese frosting that tastes every bit as indulgent as the Starbucks original.

I’ve been making these for the last few holiday seasons, and honestly, nobody who tries them can tell they’re low-carb. The bars have that soft, blondie-like texture you expect — a slightly golden crust, chewy dried cranberries throughout, and creamy white chocolate chips melted right into the batter.

Then you top the whole thing with that dreamy frosting and drizzle on more white chocolate. It’s the kind of dessert that disappears from a cookie plate in minutes.

The recipe is naturally gluten-free thanks to the almond flour base, and it can be made completely dairy-free with just a couple of easy swaps I’ll walk you through below. If you love the cranberry-orange combination as much as I do, you might also enjoy this cranberry orange banana bread — it’s another favorite that celebrates the same flavors.

What Makes These Cranberry Bliss Bars Keto-Friendly?

Traditional Cranberry Bliss Bars are packed with refined sugar and wheat flour — two things that are completely off the table on a ketogenic diet. This recipe replaces all-purpose flour with finely ground almond flour, which keeps the carb count low while adding a rich, almost buttery flavor to the bars.

Coconut oil stands in for butter, giving the crust a tender crumb without any dairy.

The sweetness comes entirely from monk fruit sweetener, which has zero glycemic impact and doesn’t cause the blood sugar spike that regular sugar does. I use it in both the bars and the frosting — a powdered version works best for the frosting so you get that smooth, lump-free texture.

At around 210 calories per bar with minimal net carbs, these fit comfortably into a keto macro plan.

For the dried cranberries, look for brands sweetened with monk fruit or allulose rather than sugar. A lot of “reduced sugar” cranberries still contain a surprising amount of carbs.

If you’re building out a whole keto holiday spread, my keto powdered donuts are another crowd-pleasing option worth adding to your list.

Can You Make These Bars Dairy-Free?

Absolutely. The bar base itself is already dairy-free since it uses coconut oil instead of butter.

The only places dairy shows up are the cream cheese frosting and the white chocolate chips used both in the bars and as a drizzle on top.

For the frosting, simply swap in a dairy-free cream cheese — brands made from coconut or cashew cream work beautifully and whip up just as smooth. For the white chocolate, look for dairy-free white chocolate chips; several brands use cocoa butter and coconut milk to achieve that classic sweet, creamy taste.

Once you’ve made those two substitutions, the entire recipe is 100% dairy-free without any loss of flavor or texture.

Tips for the Perfect Texture

The biggest key to nailing these bars is patience. After baking, let the crust cool completely before spreading on the frosting.

I know it’s tempting — the kitchen smells incredible and you just want to dig in — but warm bars will melt the frosting into a sad, runny mess. Give it at least 30 to 45 minutes at room temperature, or pop the pan in the fridge for 15 minutes to speed things up.

Don’t overmix the batter either. Once all the bar ingredients come together and you’ve pressed the mixture evenly into the pan, you’re done.

Overworking almond flour batters can make them dense and crumbly rather than tender. You want a soft, blondie-like texture that holds its shape when sliced.

When it comes to the dried cranberries and white chocolate chips folded into the batter, try to distribute them evenly so every bar gets a little bit of everything. I press the mixture into the pan in sections, scattering the add-ins as I go, and then finish with an even layer on top before it goes in the oven.

How to Store Cranberry Bliss Bars

These bars keep beautifully in the refrigerator for up to one week. Store them in an airtight container, and layer parchment paper between the bars if you’re stacking them to prevent the frosting from sticking.

The cold fridge actually firms up the frosting and the white chocolate, giving the bars an even more satisfying bite.

You can also freeze them. Wrap individual bars tightly in plastic wrap, then place them in a freezer-safe bag or container.

They’ll keep for about two months and thaw in the fridge within a couple of hours. I love having a stash in the freezer for unexpected guests or last-minute holiday gatherings.

What to Serve With Cranberry Bliss Bars

These bars are rich, creamy, and full of flavor, so they pair wonderfully with a hot cup of coffee or tea. For a truly indulgent pairing, try them alongside a creamy chocolate drink — the contrast of bitter chocolate with sweet cranberry and white chocolate is absolutely perfect.

They also make a fantastic addition to a holiday dessert spread. Set out a plate of these alongside some double chocolate cookies with sea salt for contrast, and you’ve got a dessert table that looks like it came from a professional bakery.

The bars cut into 16 generous pieces, which makes them ideal for sharing at parties or adding to homemade cookie gift boxes.
