There’s something about cauliflower that’s just so comforting. It might sound odd, but every time I make this dish, it takes me back to a cozy evening spent with friends, chatting away while this cheesy goodness baked in the oven.

Remember that baked potato trend that took over the internet? Well, I thought, why not try it with cauliflower? Let me tell you, it turned out even better than I imagined. 😋

Whether you’re enjoying it as a snack with your favorite dip or as a side dish with some crispy potatoes, this baked cauliflower is sure to hit the spot.

Baked Cauliflower with Cheese

Ingredients

  • 1 small head of cauliflower
  • 2-3 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • Cheese for sprinkling (mozzarella, edam, parmesan—whatever you love!)
  • Optional sides: potatoes, tartar sauce, or your favorite dip

Instructions

  1. Boil the Cauliflower:
Start by boiling the cauliflower until it’s tender but not falling apart. Once it’s done, let it cool slightly so it’s easier to handle.
  2. Prepare the Rub:
In a small bowl, mix together the olive oil, smoked paprika, and salt. This mixture is what gives the cauliflower its deliciously smoky flavor.
  3. Smash and Season:
Gently press down on the cauliflower with a glass to flatten it a bit. Then, brush or rub the cauliflower with the oil mixture, making sure it’s evenly coated. Sprinkle generously with your favorite cheese—this is where the magic happens! 🧀
  4. Bake to Perfection:
Preheat your oven to 195°C. Place the cauliflower on a baking tray and bake for about 20 minutes, or until the cheese is melted and golden.
